Growing our own produce gives our chefs a freedom that most kitchens simply don’t have. They can choose varieties for flavour, crop them at exactly the right moment and cook with ingredients at their absolute best. The result is food that is creative, seasonal and genuinely exciting – not in a complicated or overwrought way, but in the way that great ingredients, treated well, always are.
